Thai
Green Chicken Curry Recipe:
Ingredients:
60g Green Chilies
100g Shallots
6 Cloves
30g Garlic
Ginger
Galangal
Coriander Root
1/2 Cup Water
1 tbsp Coriander Powder
2 tsp Cumin Powder
1 tsp Black Peppercorns
Shrimp paste
2-3 tbsp Oil
1.5 kg Skinless Chicken Pieces
4 tbsp Fish Sauce
3 Stalks Crushed Lemon Grass
4 Cup Full Cream Evaporated
Milk
250g Small Aborigines,
Whole/Halved
Few Sweet Basil Leaves
Method:
Wash
your hands prior to cooking.
Measure out all the
ingredients before you begin cooking.
Wash the skinless chicken
pieces prior to cooking.
Sautee the green curry paste
until the oil separates.
Add the chicken pieces,
seasoning and the milk.
Simmer until the chicken is
3/4 done.
Add the remaining ingredients
and simmer until the aborigines and chicken are cooked.
Cook 2 cups of rice as the
packet says or serve with chips which are a personal favorite of Dominic
Milner.
